The château
In Parempuyre, in the south of the Haut-Médoc, very close to Bordeaux, around a late 19th-century château. The Fayat family has owned it since 1976 and named it after Clément Fayat.
Merlot and Cabernet Sauvignon. A supple Haut-Médoc, ready to drink in its first years, at an everyday wine price. The appellation's other châteaux are on the Haut-Médoc wines page.
The vineyard, facing north–south, grows on sands and dry gravels, with clay in the subsoil that keeps it fresh. Merlot makes up over 70% of the planting, a rarity in the Médoc. The vines are farmed to High Environmental Value (HVE) level 3, and the property, listed as a historic monument in 2002 together with its park, is a bird reserve in a Natura 2000 area. Since the 2018 vintage, the wine has carried the cru bourgeois supérieur designation.
What to serve it with
- With a meal: grilled meats, roast poultry (wine with poultry), magret (wine with duck).
- At a buffet: charcuterie, pressed cheeses (wine with cheese).
- At a barbecue: served slightly cool, around 16 °C.
Which vintage for which occasion
The red for a big meal, a drinks reception or a family party, to serve to a hundred people without counting (which Bordeaux for a wedding). Recent vintages are ready to drink.
Should a Clément-Pichon be kept?
There is no need: it is made to be drunk in its first five to eight years. The vintages in the table are ready.
How many bottles for a hundred people?
It depends on the length, the number of wines served and the share of non-drinkers. The calculator does the count, moment by moment through the event.
When to drink a Clément-Pichon?
Allow two years before opening it and ten years of good form, a little more in a great year, a little less in a weak year or in half bottles. The table applies this rule to each line; it is not a tasting note, and a badly stored bottle ages faster.
